In Kerala, the coastal port city of Thalassery became the birthplace of a distinctive biryani style. The local Muslim community, influenced by Arab traders and the unique spices available on the Malabar coast, created what we now know as Thalassery biryani - a perfect blend of fragrant rice, tender meat, and aromatic spices.
